Ingredients
- 4 cups cooked brown rice
- 8 cups fresh broccoli, cut into small flowerets
- 1 medium onion, chopped small
- 2 tsp. olive
- 1 tsp. sweet curry powder
- 1/2 tsp hot curry powder
- 1/2 tsp. sea salt salt
- 1/2 tsp. Spike Seasoning
- 1 1/2 cups grated Mozzarella
- 1 1/2 cups sour cream
- 1/2 cup mayo
- 3 T fresh squeezed lemon juice
- 1 1/2 tsp. sweet curry powder
Directions
- Prepare the brown rice by following the package instructions or cooking it in a rice cooker, ending with 4 cups cooked brown rice.
- As the rice gets close to finished, trim the broccoli into small florets until you have 8 cups. Fill a large pot with water and bring it to a boil, stir in about 1 tsp. salt, then add the broccoli and cook it for exactly 2 minutes. Pour the broccoli into a colander in the sink so it can drain.
- Set the oven to 375F/190C.
- Warm the olive oil in a non-stick frying pan. Add the onion and cook over medium-high heat until it begins to take on some color, about 5 minutes. Stir in the sweet curry powder and hot curry powder, and continue cooking for 1-2 minutes. Add the cooked rice, mix until the grains are coated with the seasoned oil, and let it cook a couple of minutes longer if the rice needs warming.
- In a bowl, whisk the sour cream, mayo, lemon juice, and sweet curry powder until smooth and combined.
- Coat an 8″ x 8″ glass casserole dish with non-stick spray. If your dish is not especially deep, choose one that is a bit larger.
- Build the casserole by spreading one portion of the rice mixture in the dish, followed by one portion of the broccoli, one portion of the curry sauce, and one portion of the cheese, making each layer as even as you can.
- Repeat those layers once more with the remaining rice mixture, broccoli, curry sauce, and cheese.
- Bake for about 30 minutes, until the edges are bubbling and the cheese on top has a little golden color. Serve hot.
- This should freeze well, though it has not been tested that way.
