Walnut Snowball Cookies

Ingredients

  • 1 cup all-purpose or cake flour
  • 1 1/2 cups walnuts, finely chopped
  • 2 to 3 Tbsp sugar
  • 1 teaspoon vanilla extract
  • 8 tablespoons unsalted butter, at room temperature
  • Pinch of salt
  • Powdered sugar, to coat

Directions

  1. In a large bowl, stir together the flour, walnuts, salt, and sugar. Pour in the vanilla extract. Cut or pinch the butter into little pieces, add it to the bowl, and work everything together with clean hands until the mixture resembles rough crumbs dotted with nuts.
  2. Slide the dough into the fridge for at least 30 minutes, or leave it there overnight.
  3. Heat the oven to 300 degrees F, and prepare a baking sheet using parchment paper or silicon baking mats.
  4. Shape the dough into small balls, each no larger than a walnut, and arrange them on the cookie sheet with at least an inch of space between each one.
  5. Bake the cookies for 35 minutes.
  6. While the cookies are still warm but comfortable to touch, coat them in some powdered sugar. Move them to a rack and let them cool all the way. Once cool, dust them again with powdered sugar.
