Yellow Tomato Salad with Roasted Red Pepper, Feta, and Mint
A bright no-cook tomato salad with roasted peppers, feta, and mint, finished with lemony olive oil for a fresh, savory bite.
Prep 15 min · Makes 4 servings

Ingredients
- 4-5 large yellow tomatoes
- 1 cup coarsely chopped roasted red bell peppers
- 1/4 cup chopped fresh mint
- 2 T crumbled feta
- 2 T olive oil
- 2 tsp. fresh lemon juice
Directions
- Cut up the roasted red peppers and transfer them to a small bowl. In another bowl, whisk the olive oil with the lemon juice, then pour that over the peppers and stir. Set them aside to soak up the dressing while you get everything else ready.
- Rinse the tomatoes, dry them well, remove the stem ends, and cut them into easy-to-eat pieces. If they are especially juicy, you can let them sit in a colander for a minute, though the juice has lots of flavor, so skip that if a saucier salad sounds good.
- Rinse and chop the mint, then crumble the feta.
- Add the tomatoes, the dressed peppers, and the mint to a bowl, then fold everything together gently.
- Divide the salad among individual plates, scatter the feta on top, and serve it at room temperature.
