Prep 15 min · Makes 4 servings

Ingredients
- 1/3 cup olive oil
- 1/4 cup apple cider vinegar
- 1 clove garlic
- 1 1/2 Tbsp Dijon mustard
- 1/4 tsp salt
- 10-15 cranks freshly cracked pepper
- 1/2 lb chopped kale, about one bunch
- 1 medium granny smith apple
- 1/4 cup raisins
- 1/2 cup walnut halves
Directions
- Give the kale a thorough rinse in a colander with cool water running over it. Set it aside to drip dry while you pull together the rest of the salad.
- Add the olive oil, apple cider vinegar, Dijon mustard, garlic clove, salt, and pepper to a blender. Blend until the garlic is finely broken down and the dressing turns smooth.
- Wash the apple, then either cut it into slim wedges or chop it into cubes. Give the walnut halves a rough chop.
- Check the kale before it goes into the bowl; you want it as dry as you can get it. Add it to a large bowl with the apple, walnuts, and raisins. Pour on half of the dressing to begin, toss until the leaves are coated, then add more dressing if you want it; using all of it is totally fine.
