Ingredients
- 1 cup Japanese shoyu, soy sauce
- 1/2 cup dark brown sugar
- 1 cup Mirin
- 1/2 cup Sake
Directions
- Combine the soy sauce, sugar, mirin, and sake in a small saucepan. Set it over medium-high heat and bring it to a boil, then lower the heat so it gently simmers. Cook until the sauce has thickened enough to coat the back of a spoon, about 20 minutes.
- Take the pan off the heat and allow the sauce to cool. Use it right away, or transfer it to an airtight container and refrigerate.
