Prep 10 min · Cook 10 min · Total 20 min · Makes 8 small pizzas

Ingredients
- 8 fajita size flour tortillas
- 3/4 cup BBQ sauce
- 1 can black beans
- 2 cups shredded monterrey jack cheese
- 3 whole green onions
- 1 small red onion
Directions
- Heat the oven to 400 degrees. Set the tortillas on a wire cooling rack, then move the rack into the oven. Bake for 5 minutes, just until the tortillas firm up a bit without turning fully crisp. If you are preparing more than 2 pizzas, work through this in batches.
- As the tortillas get their head start in the oven, slice the red onion and green onions thinly. Once the tortillas are ready, keep them on the cooling rack while you build the pizzas. Spread each one with 1-1.5 tablespoons of BBQ sauce, then add 1/4 cup well-drained black beans, 1/4 cup shredded cheese, and a small scattering of both onions.
- Return the rack with the topped pizzas to the oven and bake for another 5 minutes, until the cheese is melted and bubbling and the edges are crisp and golden brown. The tortillas may feel a little soft right at 5 minutes, but they will continue to crisp once they come out of the oven.
