Ingredients
- 1 ball prepared pizza dough for 12" pizza
- 1 Tbsp olive oil
- 1/2 lb frozen spinach
- 1/4 tsp garlic powder
- 1/4 tsp salt
- Freshly cracked pepper
- Pinch crushed red pepper
- 1 cup shredded mozzarella
- 1/8 medium red onion, optional
- 2 oz Chevre, goat cheese
Directions
- Set your oven to 450 degrees. Warm the frozen spinach in the microwave or let it sit out until the big frozen pieces have loosened. Mix in the garlic powder, salt, and crushed red pepper flakes, stirring so the seasoning gets all through the spinach. Add the mozzarella, then give it another stir.
- Get your pizza pan ready with non-stick spray or cornmeal. Pull and press the dough into a 12" circle, then move it onto the pan. Brush the surface with the 1 tablespoon olive oil. Spoon the spinach-cheese mixture across the dough. Cut the red onion into thin slices and scatter it on top, then crumble the goat cheese over everything.
- Bake for 10 minutes, until the crust has some color and the goat cheese crumbles are lightly browned. Cut into 6 pieces and serve.
