Bittersweet Grapefruit Rosemary Punch Mocktail
A bright, bittersweet citrus punch with grapefruit, orange, rosemary syrup, tea, and plenty of sparkle.

Ingredients
- 1/2 cup honey
- 1/2 cup water
- 4 rosemary sprigs, divided
- 3 cups freshly squeezed grapefruit juice, chilled
- 1 1/2 cups freshly squeezed orange juice, chilled
- 3/4 cup freshly squeezed lime juice, chilled
- 2 cups strong brewed decaf black tea, chilled
- 2 cups tonic water, chilled
- 3 cups non-alcoholic sparkling wine, chilled
- 1 orange, thinly sliced
- Ice
Directions
- Combine the honey, water, and 3 rosemary sprigs in a small saucepan over medium heat. Warm just until the honey dissolves, then remove from the heat and let it steep for 15 minutes. Strain and chill the syrup.
- In a large pitcher or punch bowl, stir together the grapefruit juice, orange juice, lime juice, black tea, and rosemary syrup. Taste the base before adding bubbles; it should be a little bold and tart since the ice and carbonation will soften it.
- When you are ready to serve, add a generous amount of ice. Gently stir in the tonic water and non-alcoholic sparkling wine, then float the orange slices on top. Garnish with the remaining rosemary sprig and serve cold.
