Ingredients
- 4 cups blackberries, rinsed clean
- 1/2 cup white granulated sugar
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/4 teaspoon cinnamon
- 1 1/2 tablespoons cornstarch, or instant tapioca
- 1 cup all purpose flour
- 3 tablespoons sugar
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter
- 1/4 cup milk
- 1 large egg, lightly beaten
Directions
- Add the blackberries, sugar, lemon zest and juice, cinnamon and cornstarch to a 9x9 baking dish. Stir until everything is combined and the berries are coated evenly with the sugar.
- Set the dish aside for 30 minutes so the berries can macerate, the sugar can melt in, and the juices can begin to collect. Heat the oven to 350 degrees F. For the topping, whisk the flour, 3 tablespoons of the sugar, baking powder, and salt together briskly in a medium bowl. Work the butter into the flour mixture with your fingertips or a fork until it looks like rough, crumbly bits.
- Create a hollow in the middle of the mixture, then add the milk and beaten egg. Stir just until the dough is moistened.
- Using large spoonfuls, drop the dough over the berries in the baking dish, spacing it in a cobblestone-style layer.
- Bake at 350 degrees F for 30 minutes, until the berries are bubbling and the topping is browned.
- Serve with whipped cream or vanilla ice cream.
