Cafe Rio Style Creamy Tomatillo Salad Dressing
A tangy cilantro-tomatillo ranch dressing with lime, garlic, and a little heat, made for drizzling over salads, tacos, or burrito bowls.
Prep 10 min · Total 1 hr 40 min · Makes about 2 1/2 cups

Ingredients
- 2 cups prepared Ranch Dressing
- I usually use a packet of Hidden Valley Ranch buttermilk mix, but you can make your own
- 1 small bunch cilantro, large stems removed
- 2 large or 4 small tomatillos
- 1/2 tsp. minced garlic
- 2 T fresh lime juice
- 1 tsp. Green Tabasco sauce or 1 diced jalapeno pepper
Directions
- Make the Ranch dressing using the package instructions or the recipe you’ve chosen, then transfer it to the refrigerator. If your dressing comes from a packaged mix and you have time, let it cold for an hour or two so it can thicken up.
- Trim away the big cilantro stems. Rinse the leaves, then dry them in a salad spinner or pat them dry with paper towels.
- Place the cilantro in a food processor with the steel blade attached, and pulse until it is chopped very fine. No food processor? Mince everything thoroughly by hand, then finish the dressing in a blender.
- Put the tomatillos, garlic, lime juice, and either the Green Tabasco or the chopped jalapeno into the processor with the cilantro. Pulse until the mixture becomes a fine puree.
- Pour in the 2 cups of prepared dressing, then pulse only a few times, just until everything comes together.
- Refrigerate the dressing for an hour or two before serving.
