Ingredients
- 1/2 cup mayonnaise
- 3 Tbsp apple cider vinegar
- 2 Tbsp honey
- 1 Tbsp Dijon mustard
- 1/4 tsp salt
- Freshly cracked pepper
- 1 head Romaine lettuce
- 1 cup red seedless grapes
- 1/4 red onion
- 2 oz. feta, crumbled
- 3 oz. bacon
Directions
- In a bowl, whisk the mayonnaise with the vinegar, honey, Dijon, salt, and freshly cracked pepper, using about 10 twists of your pepper mill. Tuck the dressing in the refrigerator until you need it.
- Cut the bacon crosswise into 1-inch pieces. Set a skillet over medium heat and cook the bacon until it turns browned and crisp. Move it to a plate lined with paper towels so the extra fat can drain away.
- Cut the lettuce into pieces you can actually manage with a fork, then wash it under cool water in a colander. Leave it there to drip dry while you get the toppings ready.
- Slice the red onion thinly. Halve the grapes. Break the feta into crumbles.
- For serving, portion the lettuce into 4 bowls, then add the grapes, red onion, bacon, and feta to each one. Spoon the creamy Dijon dressing over the salads, and you’re good to go.
