Cajun Salmon Burgers

Ingredients

  • 6 oz. Canned Salmon
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 Tbsp mayonnaise
  • 1/2 tsp coarse ground mustard
  • 1 green onion, sliced
  • 1/2 tsp smoked paprika
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1 pinch cayenne, or to taste
  • 1 pinch freshly cracked pepper
  • 1/8 tsp salt
  • 1/2 Tbsp cooking oil
  • 1/2 Tbsp butter
  • 2 buns
  • 1/4 cup guacamole
  • 1 cup spring mix

Directions

  1. Pour off the liquid from the canned salmon, then put the salmon in a bowl with the breadcrumbs, egg, mayonnaise, mustard, green onion, and Cajun seasoning spices. Mix everything together, then let the bowl sit in the refrigerator for 30 minutes so the seasonings can mingle and the breadcrumbs can take up some moisture.
  2. When the 30 minutes are up, form the salmon mixture into 2 patties, making each one about 3-4 inches across.
  3. Warm the oil and butter in a large skillet over medium heat. When the butter has melted and starts to bubble, place the salmon burgers in the pan and cook them for 3-5 minutes per side, until nicely browned.
  4. For serving, set 1 burger on each bun, spoon 2 Tbsp guacamole onto each one, and finish with a small handful of spring mix.
