Directions
- Heat your oven to 400ºF. Grab a large bowl and combine the flour, sugar, salt, baking powder, garlic powder, and freshly cracked pepper, about 5 cranks of a pepper mill. Chop the cold butter into pieces and drop it into the flour mixture. Use your fingers or a pastry cutter to rub the butter through the flour until it looks like damp sand, with no big butter pieces hanging around. Mix in the shredded cheddar and sliced green onions.
- In another bowl, whisk the milk and eggs together until the mixture is smooth. Pour it into the dry ingredients, then stir until you have a sticky dough and there is no dry flour left at the bottom of the bowl. Bring the dough together with your hands into one cohesive ball.
- Move the dough to a lightly floured work surface and pat it into a round 8 inch diameter circle, about 1-inch thick. Cut the circle into 8 wedges.
- Arrange the wedges on a parchment-lined baking sheet and bake them in the 400ºF oven for about 18 minutes, until the scones are golden brown. Serve them warm, or let them cool to room temperature.
