Creamy White Chicken Lasagna Roll Ups

Ingredients

  • 9 lasagna noodles
  • 2 cups boneless, skinless chicken breast, cooked and shredded
  • 8 oz shredded Mozzarella cheese, divided, 2 cups
  • 1 oz finely shredded Parmesan cheese
  • 1 oz finely shredded Romano cheese
  • 1/4 cup chopped fresh parsley
  • 2 pkgs cream cheese, softened
  • 1 cup milk
  • 1 1/2 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat the oven to 350 degrees. Cook the lasagna noodles as the package directs, then drain them and lay the pieces flat in one layer on a large sheet of wax paper.
  2. In a mixing bowl, combine the shredded chicken with 1 cup of the Mozzarella cheese, the Parmesan, the Romano, and 3 Tbsp of the fresh parsley. Set that bowl aside.
  3. In another mixing bowl, beat the cream cheese with an electric hand mixer on low until it is smooth. Add the milk, dried basil, garlic powder, onion powder, and salt and pepper to taste; the original note used very little salt and 1/2 tsp pepper. Spoon half of this cream cheese mixture into the chicken bowl and toss until the filling is coated evenly. Save the rest of the cream cheese mixture for assembling.
  4. Spoon 1/3 cup of the chicken filling over the length of each cooked lasagna noodle, spreading it out evenly, then roll each noodle up from one end to the other. Coat the bottom of a 9 x 9-inch dish with 1/4 cup of the reserved cream cheese mixture. Arrange the rolls tightly in the dish, side by side, in 3 rows of 3.
  5. Spoon the remaining cream cheese mixture over the lasagna rolls, covering the pasta tops completely so they stay moist in the oven. Scatter the remaining 1 cup Mozzarella cheese over everything. Bake at 350 degrees for 25 – 30 minutes, until the rolls are hot and the cheese has melted. Finish with the remaining 1 Tbsp chopped fresh parsley. Serve warm.
  6. For the shredded chicken, one easy method is the slow cooker: pour 1 can low-sodium chicken broth over 2 medium chicken breasts, cook for 6 hours, then remove the chicken and shred it into very small pieces.
