Ingredients
- 1/2 cup mayonnaise
- 2 Tbsp fresh lime juice
- 1 tsp ground cumin
- 1/2 tsp salt
- Pinch cayenne pepper
- 1 tsp sugar
- 1/2 head green cabbage
- 2 carrots
- 1/2 bunch green onions
Directions
- Make the dressing first: stir the mayonnaise, lime juice, cumin, salt, sugar, and a pinch of cayenne together until combined. Slip it into the refrigerator while you prep the vegetables.
- Slice the cabbage into quarters and trim the core out of each piece. Halve those pieces again so you have narrow wedges, then cut crosswise through the wedges to create thin shreds. Peel the carrots and grate them on the large holes of a cheese grater. Cut the green onions into thin slices.
- Add the cabbage, carrots, and green onions to a large bowl. Spoon the dressing over the vegetables and toss until the slaw is evenly coated. You can serve it right away or chill it until you’re ready; if it has been in the refrigerator, give it a good stir before it goes to the table.
