Ingredients
- 1 small yellow onion
- 2 Tbsp vegetable or canola oil
- 2 Tbsp flour
- 2 Tbsp mild chili powder
- 3 oz. tomato paste
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper, optional
- 3/4 tsp salt
- 2 cups water
- 3 cups chicken broth
- 4 oz. can chopped green chiles
- 15 oz. can hominy
- 1.5 cups shredded pork, chicken, or beef, pre-cooked
- 1 fresh lime
- 1/2 bunch fresh cilantro
Directions
- Chop the onion very small and put it in a large soup pot with the canola oil. Set the pot over medium heat and cook for 3-5 minutes, stirring now and then, until the onion softens and turns translucent. Stir in the flour and chili powder, and cook for 2 minutes more, keeping everything moving so the dry mixture does not burn.
- Pour in 2 cups water, then add the tomato paste, cumin, garlic powder, cayenne pepper, and salt. Whisk until the tomato paste is fully worked into the liquid. Let it reach a simmer; as it bubbles, the mixture will start to thicken.
- Add the chicken broth, shredded meat, diced chiles, and drained hominy. Give the pot a good stir, then let everything warm through, about 10 minutes.
- Slice the lime into wedges and give the cilantro a rough chop. Finish each bowl with cilantro and a lime wedge for squeezing over the top.
