Ingredients
- 1 cup uncooked white rice
- 1 tablespoon extra virgin olive oil
- 1 small onion, chopped
- 1/2 green bell pepper, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 3 cloves minced garlic
- 2 16-ounce cans of black beans, rinsed and drained
- 2 tablespoons white vinegar
- A few dashes of Tabasco or 1/4 teaspoon cayenne powder
- 1 teaspoon dried oregano OR 1 heaping tablespoon chopped fresh oregano
- Salt and pepper to taste
- Optional Lime wedges and cilantro for garnish
Directions
- Prepare the rice following the package directions. For white rice, that generally means about 15 minutes of cooking after the water reaches a simmer, followed by 10 minutes off the heat to rest.
- Warm the oil in a large skillet over medium high heat. Add the onions and bell peppers, and cook for 3-4 minutes, just until they start to soften. Stir in the garlic and cook for another minute.
- Add the black beans, vinegar, and Tabasco or cayenne. Let the vinegar come to a simmer, then lower the heat, cover the skillet, and cook for 5 minutes.
- Stir in the rice and oregano. Season with salt and pepper to taste.
