Egg Florentine Quesadillas

Ingredients

  • 1 6", 8" or 10" diameter your preference flour tortilla
  • 1 large egg
  • 1/4 cup creamed spinach
  • 2 Tbsp shredded cheddar cheese

Directions

  1. Heat a small skillet and fry the egg. If you want that yolk to stay runny, get the pan properly hot before the egg goes in. Cook it on 1 side, stopping when the whites are nearly firm but the yolk still moves, then turn it over just briefly and cook for about 30 seconds. That little flip sets the top of the whites and lightly seals the yolk while keeping the center soft.
  2. On 1 side of the tortilla, spread the creamed spinach; cold from the fridge is fine. Scatter the 2 Tbsp of cheddar over the spinach, set the cooked egg on top, and fold the empty half of the tortilla over the filling.
  3. Put the folded tortilla back into the same hot skillet you used for the egg, with the heat still on. Toast it on both sides until the tortilla is browned and crispy, then serve immediately.
