Ingredients
- 1 whole head garlic
- 2 tablespoons olive oil
- 1 recipe Best Basic Guacamole
Directions
- Heat the oven to 350 degrees F. Slice the top from the garlic head so the clove tips are visible, rub the whole thing with olive oil, and set it on a rimmed baking sheet lined with foil. Roast until the garlic is very tender and deeply browned, about 45 minutes.
- Press the cloves out of the head, then mash them into a paste with the back of a fork. Fold the garlic paste into the guacamole and serve right away with warm tortilla chips.
