Ham and Cauliflower Casserole Au Gratin

Ingredients

  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • Salt and freshly ground black pepper to taste
  • 4 cups cooked ham, diced into cubes
  • 4 cups cauliflower florets, steamed until tender
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons grated Parmesan cheese

Directions

  1. Set the oven for 375 degrees F (190 degrees C), and grease a 9x13 inch baking dish.
  2. Add the Parmesan cheese, cheddar cheese, cauliflower florets, ham cubes, salt and pepper, nutmeg, and thyme to a large bowl. Toss everything together until well mixed, then spread it evenly in the prepared baking dish.
  3. Melt the butter in a medium saucepan set over medium heat. Add the garlic and onion, and cook until softened. Stir in the flour until it disappears into the butter, then slowly pour in the chicken broth, stirring the whole time, until the sauce thickens. Pour the sauce evenly over the ingredients in the baking dish.
  4. Bake until the casserole is bubbling and the top is golden brown, 25 minutes. Serve hot.
