How To: Roast a Head of Garlic

Ingredients

  • Olive oil
  • Garlic

Directions

  1. Pull away the loose, papery layers from the garlic head. With a sharp knife, cut 1/4″-1/2″ from the top of the cloves, exposing the garlic inside each one.
  2. Set the garlic on a square of aluminum foil. Spoon olive oil over the cut cloves, then rub it in with your fingers so the tops are well coated. Bring the foil up and around the garlic until it is completely wrapped.
  3. Put the foil packet straight on the oven rack, or set it on a pan. If you are making several heads at once, muffin tins are a handy way to keep them upright.
  4. Roast at 400 degrees for 30-35 minutes, until the cloves are tender and just lightly browned. Unwrap the garlic and serve.
