Individual Blueberry Buttermilk Loaves Recipe

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup buttermilk

6 tablespoons butter, melted and cooled slightly

2 large eggs, lightly beaten

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 cups fresh blueberries

Directions

Preheat oven to 350 degrees F . Grease and flour two 8x4 inch loaf pans. In a medium bowl, mix together the blueberries, vanilla extract, and sugar. Set aside. In a large bowl, beat together the eggs and butter until light and fluffy. Stir in the buttermilk. Add the salt, baking soda, baking powder, and flour; mix until just combined. Fold in the blueberry mixture until evenly distributed throughout the batter. Divide the batter between the prepared pans and spread evenly with a spatula or spoon. Bake for 40 to 45 minutes or until a toothpick inserted into the center of each loaf comes out clean. Allow to cool in pans for 10 minutes before turning out onto wire racks to cool completely before slicing and serving.
