Ingredients
- 1 1/2 cups raisins
- 1 cup strongly brewed tea, such as Irish Breakfast, cooled
- 2 cups self-rising flour
- 1 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 egg, lightly beaten
- Old fashioned oats, thick cut if possible
Directions
- Put the raisins in a bowl with the tea, cover the bowl, and chill it overnight.
- Set an oven rack in the center of the oven, then heat the oven to 350 degrees F. Butter and flour a loaf pan, tapping away the extra flour.
- In a large bowl, stir together the flour, sugar, cinnamon, nutmeg, egg, raisins, and tea until combined. Scrape the batter into the prepared loaf pan and scatter oats over the surface. Bake until the top is browned, about 1 hour 40 minutes.
- Cool the bread in the pan for 15 minutes, then turn it out onto a wire rack and let it finish cooling.
