Keto Pizza Cauliflower Casserole

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 3/4 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional toppings: pepperoni, mushrooms, olives, bell peppers

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Add the cauliflower florets to a large bowl with the olive oil, salt and pepper, onion powder, garlic powder, and Italian seasoning. Toss everything well so the seasoning and oil reach all the little edges.
  3. Arrange the cauliflower in a single layer on a parchment-lined baking sheet, or use a silicone baking mat. Roast for 25 minutes, until the pieces are tender and nicely browned.
  4. While that bakes, stir the pizza sauce, Parmesan cheese, and mozzarella cheese together in a medium bowl. Put it aside for the moment.
  5. When the cauliflower comes out of the oven, move it into an 8x8 inch baking dish, or another dish close to that size. Spoon the sauce and cheese mixture over the cauliflower and smooth it across the top with a spoon or spatula. Add any optional toppings, such as pepperoni, mushrooms, olives, or bell peppers, if you like. Add extra Parmesan cheese on top, if desired.
  6. Return the dish to the oven and bake for another 15-20 minutes, until the cheese has melted and the edges are bubbling.
  7. Cool for 5 minutes, then serve warm.
