Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 3 tablespoons fresh lemon juice
- 2 tablespoons chopped parsley
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced kalamata olives
- 1/4 cup diced red onion
Directions
- Set the oven to 400 degrees F (200 degrees C).
- In a large bowl, stir together the olive oil, garlic powder, smoked paprika, cumin, salt, pepper, lemon juice, parsley, feta cheese, olives, and red onion until everything is well mingled.
- Tip the cauliflower florets into the bowl and toss until the seasoned mixture clings to each piece.
- Arrange the cauliflower on a baking sheet that has been lined with parchment paper or aluminum foil. Bake for 20-25 minutes, until the florets are browned and soft enough for a fork to slide in.
- Bring it to the table warm, or let it settle to room temperature, either as a salad element or a side dish.
