Orchard Fizz Mocktail

Ingredients

• 1/4 cup chopped Fuji apple
• 1 1/2 oz apple juice or fresh apple cider
• 1 oz rhubarb syrup
• 1/2 oz fresh lemon juice
• 1 tbsp aquafaba or pasteurized egg white
• Ice
• 2 to 3 oz chilled club soda
• 4 thin apple slices, for garnish

Directions

1. Add the chopped apple to a cocktail shaker and muddle until juicy and fragrant. Pour in the apple juice, rhubarb syrup, lemon juice, and aquafaba.
2. Seal the shaker without ice and shake hard until the mixture looks foamy. Add ice, seal again, and shake until well chilled.
3. Strain into a highball glass filled with fresh ice. Top with club soda and stir gently once or twice to lift the bubbles through the drink.
4. Garnish with the apple slices and serve right away.
