Philly Cheesesteak Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1/2 teaspoon olive oil
  • 1/4 cup diced onion
  • 1/4 cup diced green bell pepper
  • 3 ounces thinly sliced deli roast beef, cut into small pieces
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons shredded mozzarella cheese

Directions

  1. Bring the oven up to 375 degrees F (190 degrees C). Mist a baking sheet with cooking spray and keep it nearby.
  2. Place the mozzarella cheese, Parmesan cheese, mayonnaise, cream cheese, salt, pepper, and garlic powder in a medium bowl. Blend until the mixture is cohesive and creamy, then incorporate the roast beef, bell pepper, and onion.
  3. Pour the olive oil into a large skillet and warm it over medium heat. Drop in the mushroom stems and sauté for 2 minutes, stopping when they are softened. Move the pan away from the heat and reserve the stems.
  4. Pack the beef mixture into the mushroom caps, then transfer the filled mushrooms to the prepared baking sheet. Bake for 15 minutes, stopping when the mushrooms have softened and the filling has a golden brown surface. Serve warm.
