Red Flannel Hash

Ingredients

  • 4 Tbsp butter
  • 1 cup chopped onion
  • 2 cups chopped cooked corned beef
  • 1 1/2 cups chopped cooked beets
  • 1 1/2 cups chopped cooked potatoes
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup chopped fresh parsley, optional
  • Freshly ground black pepper to taste

Directions

  1. Warm the butter in a frying pan, preferably cast iron, over medium high heat. Add the onions and cook for a couple of minutes, just until they turn translucent. Add the corned beef, potatoes and beets, then stir everything together and level it into an even layer. Turn the heat down to medium, and use a metal spatula to press the mixture into the pan so it can brown.
  2. Leave the hash alone until the bottom is well browned. Then slide a metal spatula underneath portions of the mixture and flip them so the second side can brown too.
  3. If the hash starts clinging to the pan more than you’d like, add a bit more butter right where it is sticking. Once it is nicely browned, take the pan off the heat. Add a splash of Worcestershire sauce, if you are using it. Fold in the chopped parsley, if using, and finish with freshly ground black pepper to taste.
  4. The corned beef should bring enough salt, but taste and add salt if it needs it.
  5. Serve it as is, or top it with fried or poached eggs.
