Ingredients
- 1/4 cup unsalted butter
- 3 Tbsp minced fresh dill
- 4 skin-on salmon fillets
- Salt and freshly ground black pepper
- 1 tsp minced garlic
- 1 Tbsp minced fresh parsley
- Lemon wedges or lemon zest, for serving
Directions
- Heat your oven to 475 degrees.
- Add the butter to a small roasting dish, then scatter the dill evenly over the top. Slide the dish into the oven and let it warm until the butter is melted and the dill is sizzling, about 4 – 5 minutes.
- Take the pan out of the oven and set the salmon in it, skin-side up. Put it back in the oven and roast for 4 minutes.
- Pull the pan out again and peel the skin away from the salmon. If it is not loosening easily, give it another 1 – 2 minutes in the oven.
- Sprinkle salt and pepper over the side that no longer has skin, then gently turn the fillets over and season the other side with salt and pepper too. Add the garlic to the melted butter around the salmon.
- Return the pan to the oven and cook until the salmon is done the way you like it, about 3 – 4 minutes more.
- Move the salmon to plates and spoon the butter from the pan over the fillets. Finish with parsley and serve warm with lemon zest or lemon wedges for spritzing.
