Salmon Teriyaki
Salmon seared and simmered in pineapple-ginger teriyaki, finished with fresh pineapple and mint for a bright, savory-sweet dinner.

Ingredients
- Olive oil
- Garlic
- Sugar
- Brown sugar
- Soy sauce
- Sesame oil
- Fresh mint
- Ginger
- Frying
Directions
- Make the Pineapple Teriyaki Sauce by putting just 1 cup of the pineapple into a blender with the ginger, garlic, soy sauce, brown sugar and sesame oil. Blend until the sauce is smooth.
- Cut the remaining pineapple into small dice. Finely chop the fresh mint or basil, then stir those 2 ingredients together in a small bowl and put it aside.
- Set a large sauté or frying pan over medium high heat, then add the olive oil and tilt the pan to coat it. Once the oil is hot, place the salmon filets in the pan.
- Sear the salmon for approximately 2-3 minutes per side, until a good crust forms while the center remains just barely raw.
- Add the teriyaki sauce to the pan and let it simmer for 1 minute, spooning the hot sauce over the salmon as it cooks.
- Finish the salmon with the diced pineapple and mint. Serve immediately.
