Salsa Chicken Casserole
A hearty baked casserole with chicken, rice, black beans, corn, salsa, and melted cheese for a simple dinner that feels cozy and filling.

Ingredients
- Green onions
- Onion
- Chicken broth
- Chili powder
- Green onion
- Black beans
- Chicken breasts
- Oregano
- Chicken breast
- Salsa
- Chicken
- Ice
- Onions
Directions
- Set your oven to 375 degrees. Drain the black beans, then give them a quick rinse. In an 8×8 inch casserole dish, combine the dry rice, black beans, corn, salsa, chicken broth, chili powder, and oregano, stirring until the mixture looks evenly distributed.
- Cut each chicken breast into 3 pieces. Nestle the chicken into the rice and salsa mixture, pressing it down into the liquid as much as you can. Wrap the casserole dish snugly with foil, then bake for 1 hour.
- Remove the dish from the oven and check the rice with a fork to see if it is tender. If it needs more time, cover the dish again, place it back in the oven, and bake for 10-15 minutes longer. Once the rice is tender, scatter the cheese over the top and put the casserole back in the oven for a few minutes, just until the cheese melts. Finish with the sliced green onions after baking, and serve hot.
