Sheet Pan Chicken with Roasted Baby Potatoes
Chicken and baby potatoes roast on a hot sheet pan with a honey-mustard glaze for a crisp-edged, simple dinner.

Directions
- Set a jelly-roll pan in the oven, then heat the oven to 500 degrees with the pan inside while it warms.
- Take the hot pan out of the oven carefully. Spray it with cooking spray, add the potatoes, and bake them at 500 degrees for 10 minutes.
- In a small bowl, whisk together the olive oil and the next 5 ingredients, through the honey. Season the chicken with 1/8 teaspoon salt and 1/8 teaspoon pepper. Warm a large skillet over medium-high heat, add the canola oil, and tilt the pan so the oil coats the surface. Put the chicken in the skillet and cook for 5 minutes. Flip the chicken, then spoon about 2 tablespoons of the mustard mixture evenly over the top.
- Transfer the chicken to the jelly-roll pan with the potatoes. Bake at 500 degrees for 10 minutes, until the potatoes are tender and the chicken is cooked through. Spoon the remaining mustard mixture over the potatoes, then finish with the remaining 1/8 teaspoon salt and remaining 1/8 teaspoon pepper.
