Ingredients
- 4 medium or 3 large orange-fleshed sweet potatoes
- 1 tsp. black sesame seeds
- 1 T sesame oil
- 2 T Golden Monkfruit Sweetener, or sweetener of your choice
- 2 T Verjuice or rice vinegar
- 1 T garlic puree
- 3 T soy sauce
- 1 T water
Directions
- Heat the oven to 400F/205C. In a measuring cup, stir together the sesame oil, your chosen sweetener, sugar, Verjuice or rice vinegar, garlic puree, soy sauce, and water.
- Coat a baking dish with non-stick spray or olive oil. If you have a baking dish with a lid, use it here.
- Trim off the tapered ends of the sweet potatoes, then remove the skins with a sharp vegetable peeler.
- Slice the sweet potatoes lengthwise in half, then cut each half diagonally into pieces about 1 inch thick. If any pieces are noticeably larger, cut them again so everything is fairly even.
- Transfer the sweet potatoes to a bowl or plastic bag. Add the glaze and toss, or turn the bag, until the pieces are thoroughly coated.
- Tip the sweet potatoes and all the glaze into the prepared baking dish. Cover the dish and bake for 20 minutes.
- Uncover the dish and stir, making sure the potatoes get coated again with the glaze.
- Set a timer for 10 minutes, then keep baking, stirring, and setting the timer again every 10 minutes.
- The total baking time should be about 50 minutes. The sweet potatoes are done when they feel tender when pierced with a fork, have taken on a little browning, and the glaze has been absorbed.
- Finish with black and white sesame seeds or green onions, and serve hot.
