Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1/4 cup chile jam
- 2 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 green onions, thinly sliced
Directions
- Cut the chicken breasts on a diagonal into thin strips, aiming for about 1/3-inch (1cm) wide. Move the chicken to a bowl and season it with a little salt.
- Warm the oil over medium-high heat in a large skillet or wok. Stir in the onions and cook, moving them around the pan, until they begin to soften, about 3 minutes. Next, add the chicken. Add the sliced chiles, spoon in the chile jam or paste, then pour in the oyster sauce and fish sauce.
- Cook the mixture, stirring often, until the chicken is done all the way through, about 5 minutes.
