Ingredients
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cream of tartar
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla extract
- Fresh fruit of various colors
- 5 Tbsp salted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
Directions
- For the cookies, heat the oven to 350 degrees. In a mixing bowl, whisk the flour, baking soda, salt, and cream of tartar for 20 seconds, then put the bowl aside.
- In the bowl of an electric stand mixer with the paddle attachment, beat the sugar and butter together until they come together. Add the egg and mix it in, then add the egg yolk and vanilla extract and mix again.
- Turn the mixer to low and gradually add the dry mixture, mixing only until the dough comes together. The dough will be thick, so stop the mixer and finish by hand if flour is hiding at the bottom of the bowl.
- Scoop the dough in 1 1/2 Tbsp portions, about 33g each, and roll them into balls. Arrange them on a baking sheet lined with parchment paper or a silicone liner, leaving 2-inches between cookies.
- Bake in the heated oven for 10 – 12 minutes, until the cookies still look a little underdone. Take them out and let them sit for several minutes, then move them to a wire rack to cool all the way. Continue with the remaining dough until it is all baked.
- Once the cookies are cool, and just before serving, spread them with the cream cheese frosting and add the fresh fruit on top.
- For the frosting, beat the butter in the bowl of an electric stand mixer fitted with the paddle attachment. Mix in the cream cheese until smooth, then add the powdered sugar and vanilla and beat until the frosting is light and fluffy.
