Thanksgiving Spinach Salad with Dried Cranberries, Almonds, and Goat Cheese

Ingredients

  • 5 oz. baby spinach leaves
  • 2 T dried cranberries
  • 1/4 cup slivered almonds
  • 2-3 oz. goat cheese
  • 1 T white balsamic vinegar
  • 1/2 tsp. sweetener of your choice
  • 2 T olive oil
  • Pinch of salt

Directions

  1. If the spinach needs rinsing, wash it and spin it thoroughly dry, then add it to a large bowl.
  2. In a small bowl, whisk the balsamic vinegar with the sweetener and salt. Add the olive oil and whisk again until the dressing comes together.
  3. Drizzle the dressing over the spinach and toss to coat the leaves. If you like a lighter salad, stop before using every last bit of dressing.
  4. Divide the dressed spinach among individual plates, then top each portion with dried cranberries, sliced almonds, and goat cheese. Serve immediately.
