Watermelon Rice Krispie Treats

Ingredients

  • 1 1/2 Tbsp salted butter
  • 2 1/2 cups miniature marshmallows
  • Green food coloring
  • 2 cups rice krispies cereal
  • 2 Tbsp salted butter
  • 3 1/2 cups miniature marshmallows
  • Pink or red food coloring
  • 3 cups rice krispies cereal
  • 2 tsp mini chocolate chips

Directions

  1. Coat a 9-inch round cake pan with non-stick cooking spray and put it aside. For the green edge, melt the 1 1/2 Tbsp butter in a medium non-stick saucepan over medium-low heat.
  2. Stir in 2 1/2 cups marshmallows plus green food coloring, and keep stirring only until the marshmallows are melted. Take the pan off the heat, add 2 cups rice krispies, and stir until the cereal is coated all over.
  3. Transfer the mixture to the prepared pan. When it has cooled just enough to touch comfortably, mist your hands with non-stick cooking spray, then shape and press the mixture around the outside of the pan into a rind no thicker than 1-inch; do not pack it down too hard, so the treats stay chewy.
  4. Wash and dry the saucepan. For the pink center, melt 2 Tbsp butter in the saucepan over medium-low heat.
  5. Add 3 1/2 cups marshmallows along with pink or red food coloring, stirring and cooking only until the mixture is completely melted. Take it off the heat and fold in 3 cups rice krispies.
  6. Scrape it into the middle of the cake pan. As soon as it is cool enough to handle, coat your hands with non-stick cooking spray and press it out into an even layer.
  7. Allow the treats to cool, then scatter the chocolate chips randomly over the pink area and press them in. Slice into 6 – 8 wedges. Keep in an airtight container.
