Baked Zucchini Fries
Crisp oven-baked zucchini sticks get a flour, egg, Parmesan and breadcrumb coating for an easy savory snack or side.

Ingredients
- Salt
- Water
- Egg
- Parmesan cheese
- Flour
- Bread crumbs
- Zucchini
Directions
- Wash the zucchini and pat it dry. Trim away the ends, then slice each zucchini into strips about 1/3 inch thick. Put the strips in a large zip top bag with the flour and salt, seal it, and give everything a good shake until the zucchini is coated.
- In a wide, shallow bowl, mix together the panko bread crumbs, parmesan cheese, and Italian seasoning. In a 2nd wide, shallow bowl, beat the raw egg with about 1 Tbsp of water until the mixture is mostly smooth.
- Start heating the oven to 425 degrees. Line a baking sheet with foil, then set 2 wire cooling racks on top.
- Working 1 at a time, dip each floured zucchini strip into the egg mixture, then press it into the seasoned bread crumbs. Arrange the coated strips on the wire cooling racks. The racks lift the zucchini away from the baking sheet so heat can move underneath and help keep the bottoms from getting soggy. Leave a little space between the strips, too, so the air can circulate.
- When all the zucchini strips are coated, bake them for approximately 15 minutes, until they turn a medium golden brown. The exact time depends on how thick your strips are, so keep an eye on them.
