Easy Cucumber Guacamole Appetizer Bites

Ingredients

  • 1 large European cucumber
  • 1 cup guacamole
  • Chile powder for sprinkling on top

Directions

  1. If the cucumber needs it, rinse the outside and pat it dry. Remove strips of peel if you prefer the look, or if the skin tastes too strong. Slice the cucumber into rounds about 5/8 inch thick, and discard the ends.
  2. Using a melon baller, gently hollow out the middle of each cucumber round so it forms a little cup. Spoon the guacamole into a small ZipLoc bag, then snip a corner from the bag.
  3. Arrange the cucumber pieces on a serving dish with the hollowed centers facing up. Squeeze guacamole into the middle of each cucumber cup, just enough to fill it. Finish each bite with a very small pinch of chile powder.
