Spam Fried Rice
A quick fried rice with browned Spam, soft eggs, spinach, green onions, fish sauce and cooking wine for a salty-savory skillet meal.

Ingredients
- Salt
- Eggs
- Egg
- Green onions
- Pepper
- Onion
- Green onion
- Ground pepper
- Ground
- Fish sauce
- Cooking oil
- Onions
Directions
- Warm cooking oil in a wok, or in a large, wide saute pan, over medium high heat. Once the oil is hot, pour in the eggs and stir them gently as they cook. When they are about 80% set but still a bit loose, take them out of the pan and set them aside.
- Raise the heat to high. Add a little more cooking oil to the pan, and when it is hot, add the diced Spam. Cook it until the pieces are browned.
- Add the green onions and fry them until they smell fragrant. Add the spinach and cook it until it wilts.
- Add the rice and the cooked eggs, then toss everything together so the eggs, Spam, greens and rice are evenly mixed. Leave the rice undisturbed in the pan for about 1 minute so the grains can heat through.
- Toss again, moving the rice from the top down to the bottom of the pan. Add the cooking wine and fish sauce, then stir once more. Finish with ground pepper. Check that every grain of rice is hot; if it is not, keep cooking a little longer.
- Taste for saltiness. If it needs more, add a little more fish sauce, but go easy since the Spam is already salty.
