Whiskey Miso Pork Chop
Juicy pork chops marinated in whiskey, cider and miso, then pan-cooked with a glossy savory-sweet sauce.

Directions
- Combine the whiskey, apple cider, miso, brown sugar and mustard in a sealable bag. Slip in the pork chops, close the bag, and press out as much air as you can. Chill for 15 minutes, or leave them refrigerated up to overnight.
- When you’re ready to cook, take the pork chops out of the bag. Brush the marinade off the meat, leaving as much of it as possible behind in the bag.
- Set a large frying pan over medium-high heat. Add the cooking oil and swirl it around the pan. Place the pork chops in the pan and cook for 2 minutes. Turn them over, then add the reserved marinade from the bag to the pan. Reduce the heat to medium-low and put a lid on the pan. Cook for 5 minutes, or 3-4 minutes if your pork chops are thinner than 1", until the centers reach 145F or are only faintly pink. Rest the pork chops on the counter for 3 minutes.
- Scatter parsley over the top. Spoon the whiskey miso sauce from the pan over the pork chops when serving.
