    Hi, from the left coast of Canada. Balmy Victoria, BC.

    Searching for a way to clarify duck fat rendered while cooking whole ducks, I came across your website . . . but nothing I can see offers insight into the alchemy of it. Any suggestions? The fat, while free of any visible bits, isn’t clear . . . one can’t see through to the other side of the measuring cup. It isn’t that it’s murky; I think it is full of “fines.” How can I clarify it?
